Fattoush Salad

 I’m back today with another recipe!

I’m loving sharing our favorite meals with you guys and today I’m sharing another weekly favorite – our take on Fattoush Salad!

Jon and I absolutely love Mediterranean food and we started making our own version of our favorite salad after many visits to our favorite Mediterranean restaurant.  Unfortunately, our toddler is anaphylactic to sesame – which is the main ingredient in hummus, so we no longer frequent our favorite Mediterranean restaurant due to sesame being in EVERYTHING.  Bummer!  But, that doesn’t mean we still can’t enjoy this delicious and oh-so-healthy salad.

We used to eat this meal with chicken, and – on occasion, we still do.  Just bake it and pair it with a side of hummus… do it for me. 😉 

This salad is scrumptious and the dressing is an simple and pure as they come.

Recipe:

You’ll need a bunch of Romaine Lettuce – I’m always sure to wash every leaf

5-7 salad cucumbers

A container of grape tomatoes

One white onion

A bunch of parsley

A bunch of mint

Pita bread – Bake this for 20 minutes at 350 degrees, let it cool and crumble it on top

The Dressing:

1/3 cup of Olive Oil (more or less to your taste)

1/3 cup of freshly squeezed lemons (usually 3-4 lemons – more or less to your taste)

Stir the dressing and pour on top.

You can choose to let the dressing saturate the pita to make it not as hard.  

That’s it!  EASY PEASY!

We absolutely love this salad!  It’s filling and delicious…and eating dessert afterwards is always guilt free.  😉

  1. I love Mediterranean food so much, too! We used to have this little Mediterranean Cafe that I ate at my whole life, and it was Brian's and my favorite restaurant, but they closed a few years ago and we were devastated. This sounds soooo yummy! Pinning this to try later!
